In Maharashtra, diners should prepare for a price increase as restaurants are set to raise their menu prices by 10-15% within the next eight to ten days. This decision comes in response to a significant rise in raw material costs, with the revisions expected to be completed by the time Diwali arrives, according to representatives from various hospitality associations.

The hospitality sector had anticipated a stabilization of prices by the festive season, but that expectation has not materialized. Saili Jahagirdar, head of the Pune chapter of the National Restaurant Association of India (NRAI), highlighted that the surge in raw material prices has been exponential. She noted that the proposed price hikes could be implemented across various dining formats, including dine-in and delivery services.

Vijay K Shetty, president of the Indian Hotel and Restaurant Association (AHAR), explained that the current price adjustments are driven by a sharp increase in operational costs, including a doubling of commercial LPG cylinder prices and rising costs for dairy products and wages. He emphasized that maintaining food quality and service standards while absorbing these additional costs has become increasingly challenging for restaurants.

The implications of these price hikes extend beyond individual establishments, as they reflect broader economic pressures affecting the hospitality industry in Maharashtra. The ongoing drought has further exacerbated the situation, impacting vegetable prices and leading to potential future increases. Rahul Ramnath, a member of the United Hospitality Association, indicated that the anticipated price hikes could reach as high as 18% for certain menu items, with adjustments likely to occur earlier than usual this year.

Looking ahead, the restaurant industry is bracing for continued volatility in pricing due to fluctuating costs of essential ingredients and the potential for further drought-related impacts. As restaurants navigate these challenges, they aim to balance operational sustainability with customer expectations, ensuring that any price revisions are carefully considered in light of market conditions and competition.
